The Highlights: At this eatery housed within the Ben, Autograph Collection, there’s no lack of propriety, and certainly no lack of grit. The story starts with writer Byrd Spilman Dewey, who established a homestead in a remarkably inhospitable landscape: the Florida Everglades. But she created a place where the social elite would visit and tell stories. That’s what the project is about—the stories speaking from the walls. The restaurant’s layered approach complements the eclectic vibe of the rest of the property, with contrasting textures, light and dark colors, and modern and both classic fixtures.
“The Ben Trovato was built to inspire, to entertain, to gather stories that might draw gasps from the social elite. [Dewey] was a Southerner, poised and highly educated, who thrust herself into a world of sweltering adversity,” says Malcolm Berg, president of EoA Group. “The inspiration for Proper Grit was derived from the wonderful clash between two worlds.”
